Peanut Butter Bliss
I decided to make some delicious "cereal" during nap time. Except nap time never came (yay, teething!) so, I poured myself another cup of mushroom coffee (thanks Tammi!) and started baking this afternoon! And it's not really cereal, in my opinion it's closer to a healthy cookie! Win! It will make the perfect treat for Ezra!
A friend sent me the recipe. We (Ezra and I) have recently been avoiding gluten. This is week 2. Its honestly NOT as difficult as I initially assumed. We are both still surviving, and finding new foods and recipes that we enjoy!
Today's recipe included normal ingredients that I already had on hand (yes! win again!) and it was super fast and easy.
All you need is:
1 1/2 cup Flour (we used Namaste Gluten Free flour )
1/4 cup Honey (we chose honey from a local bee keeper)
1/2 cup Peanut Butter (we used Almond Butter)
1 tsp Baking Soda (WE USED BAKING SODA lol)
1 tsp Vanilla
1/2 ripe banana
Mix it all together. Roll into tiny balls (or whatever size you want), place on baking sheet, toss in the oven for 10 mins!
As I was making them, I was dreaming of other yummy things I could add to them! Protein powder, different spices, yum - YUM! But since I anticipated on sharing these with my 14 month old for a treat - I didn't add them. Next time!
Ezra is asleep now, and I had to share my recipe with all of you! Enjoy!
